Thai Pork & Peanut Coconut Curry with Sweet Potato Rice

This delicious, hearty, low carb, healthy thai coconut curry dish is the perfect easy to make meal… and its all on top of sweet potato rice!!  Don’t worry, it may sound hard to make but it is so easy!!  You simply spiralize two large sweet potatoes with a spiralizer (they are pretty inexpensive and can be found at bed bath and beyond) and pulse the spiraled sweet potatoes a few times in a food processor. Believe us, it completely revolutionizes the way you eat vegetables. Here’s the recipe…. Enjoy!

Ingredients:

1 tbsp Nature’s Approved®   Garlic Coconut Oil

1/4 tsp minced ginger

1/3 cup minced green onions (white and green separated)

1 red bell pepper, sliced into strips

2 boneless pork tenderloins, sliced into 1/2 inch strips

1/4 peanut butter

1/4 cup Thai red curry paste

1 can coconut milk

1/4 + 1/2  cup chicken broth, separated

1 tbsp fresh cilantro leaves

2 large sweet potatoes

Instructions:

  1. To make the sweet potato rice, peel then spiralize two large sweet potatoes.  Place the noodles into a food processor and pulse until made into rice-like bits.  Place riced sweet potatoes in a large skillet with 1/2 cup of chicken broth and let simmer for 5-7 minutes.  It will be ready when the sweet potato fluffs up and softens like rice.
  2. Place a second large skillet over medium heat and add the coconut oil until it liquifies.  Add the minced ginger and cook for 30 seconds.  Than, add in the green onion (whites) and let cook for 1 minute.  Add in the pork slices and cook for about 5 minutes or until the pork starts to brown.  Remove the pork an add in the red bell pepper slices and let cook for 3 minutes.  Then put the pork back into the skillet.
  3. Add in 1/4 cup peanut butter and 1/4 cup curry paste; stir to combine and then add in the can of coconut milk and 1/4 cup chicken broth.  Toss to combine, cover and let simmer for 10 minutes.  After 10 minutes, uncover and let simmer for another 5 minutes.
  4. Once done, stir in the cilantro and remove from heat.  Serve alongside the sweet potato rice and garnish with green onions (greens).
  5. Enjoy!

Healthy Zucchini Bread

Ingredients:

1 1/4 cup softened Nature‘s Approved® Organic Extra Virgin Coconut Oil

1 3/4 cup milk

5 eggs

3 1/2 cup zucchini, grated with large holes on grater, or chopped

1 1/4  cup whole wheat flour

1 cup spelt flour

2 1/2  cup oat flour

2 1/4  cup raw, unrefined sugar

2/3 cup ground flax

1 teaspoon salt

1  teaspoon baking powder

4 teaspoons baking soda

1 1/4 teaspoon nutmeg

1 Tablespoon, 2 teaspoons cinnamon

1 cup raisins

1 1/4  cup walnuts, chopped

Recipe yields two 9 in X 5 in loaves.

Preheat oven to 350° F.  Line two loaf pans with waxed paper, covering the bottom and the two larger sides of the pan.  If coconut oil is hard, warm until it softens.  Mix wet ingredients in one bowl.  Mix dry ingredients in a second bowl.  Combine the dry ingredients to the wet ingredients and stir until well combined.  Pour batter into the two lined loaf pans.  There should be at least 1/2 inch of space above batter or it could overflow.  Back at 350° for 80 minutes, or until wooden toothpick comes out clean when inserted in the center.  Cool for 5 to 10 minutes before removing from pan.

*Whole wheat or all purpose flour can be used instead of the flours listed. Do not pack flour when measuring.

Regular sugar or brown sugar can be used instead of raw sugar. If you don’t have ground flax, add an extra 1/4 cup of coconut oil.*
